DESARROLLO DE PLATOS TÍPICOS CON PRODUCTOS DE LA ZONA COMO ESTRATEGIA PARA LA CONSERVACIÓN DEL PATRIMONIO GASTRONÓMICO Y CULTURAL DEL CANTÓN PUERTO QUITO, PROVINCIA DE PICHINCHA
Abstract
Through this research we want to make known the gastronomic cultural heritage of Puerto Quito, its roots, as background it is important to emphasize that it has a subtropical climate, it is located in the northwest of the province of Pichincha, it belongs to the Choco Andino, it is a canton with great biodiversity, its population is from various parts of the country, however, the dishes of this canton are more related to the cuisine of the Ecuadorian Coast due to its proximity.
One of the most striking products that are commonly used is the guaña, it is a kind of fish of great consumption, in the same way as the heart of palm, through this investigation what it is about is to highlight the traditional dishes and the products used in this area.
The cultural heritage of Puerto Quito Puerto Quito, is located to the northwest of the Pichincha Province, cantonal head of the Puerto Quito Canton, as well as the smallest and least populated city of the same. It is located on the banks of the Caoní River, on the outer flanks of the western Andes mountain range, at an altitude of 135 meters above sea level and with a tropical rainy climate of 25°C on average.
With the project, several axes of the Puerto Quito canton would be activated that in search of giving a social, economic, cultural, gastronomic and tourism identity, the benefits of being part of a search and research project in knowing and socializing the riches of the canton are varied and necessary. Therefore, to set clear objectives for the development and construction of the aforementioned topic and in collaboration with the main actors, which is the people of the Puerto Quito Canton.
